Jun Matoshiro | 的代 純



Jun was born in Hiroshima, Japan. He worked at a restaurant, Tawara in Hiroshima after graduating from high school. He received practical training in Kaiseki and all kinds of traditional Japanese cuisine.

In 2000, he moved to Orland, Florida and worked a restaurant Hanamizuki, serving authentic Kyoto style cuisine. After years,

he moved to Los Angeles. In 2011, he joined a team of Shojin restaurant.​

No artificial ingredients, white or brown sugar, or table salt

– not even microwaves


Provide in food that is healthy for the mind, body and soul.

Using only the highest quality ingredients,

organic whenever possible.

All dishes are created originally and made from scratch.

The food we offer is very different from the food in other restaurants. Before we imagine the taste, we think about the health of the potential customers.

We carefully take time and consideration when creating our homemade dishes.


We could offer less expensive food with cheaper ingredients, but that is not our concept.

We don’t care to make a profit if it is costing our patrons’ health.

Our pleasure is to know that our customers are healthy and happy.
